Thanksgiving is my FAVORITE holiday! I love spending time with family and friends and eating lots of delicious food. These are just a few of our favorite sides we have every Thanksgiving and bonus they can be made ahead and frozen. Don't forget to check out all the other great videos in this collaboration. I made double batches for everything in this video except the loaded mashed potatoes but all the recipes below will be for a single batch.

Dressing:
Cook 2 packages of jiffy cornbread mix to package directions. Allow to cool and crumble
1/2 cup celery and 1/2 cup onion diced and cooked until translucent in about 2 tbsp butter
5 to 6 pieces of toasted bread
1 sleeve saltine crackers
1/2 cup melted butter
6 cups chicken broth ( I use low sodium)
5 beaten eggs
1 tsp pepper
1/2 tsp poultry seasoning
Mix everything together. It should be pretty wet, if it's too dry it will be really dry after cooked. pour into a casserole dish and bake at 350 for about 1 hour to an hour 10 minutes until it doesn't "jiggle"
It's ready to eat or you can let it cool completely and freeze. To re heat, thaw completely and heat in the oven at 350 for about 20 - 30 minutes.

Sweet Potato Soufflé:
about 3 lbs cooked and mashed sweet potatoes
1/2 cup butter
1/2 cup brown sugar
1 tsp each of ginger, cinnamon, nutmeg, salt, and pepper. I also add 1 tsp vanilla but I forgot about this day and it was fine.
Mix everything together and pour into a casserole dish.
Prepare topping by chopping 1 cup pecans and toss them in 2 tbsp melted butter 2 tbsp sugar, and 1 tsp cinnamon. Sprinkle over top of casserole. If freezing you can stop here. If you're eating now, bake at 375 for 20-30 minutes

Broccoli Casserole:
about 3 cups cooked broccoli ( I used fresh but frozen is fine, still cook it first)
3/4 cups mayonnaise (you can substitute for sour cream)
2 beaten eggs
1 cup sharp cheddar cheese
1 can cheddar cheese soup ( you can also use cream of mushroom or cream of chicken)
mix all ingredients and pour into a casserole dish.
1 tsp natures seasoning (or whatever seasoning you want)
melt 1/4 cup butter and crush 1 sleeve ritz crackers for the topping, mix together and sprinkle over the broccoli mixture. Bake at 350 for about 35-40 minutes.

Loaded Mash Potato Casserole:
I made a single recipe for this one but still divided it into 2 so my recipe will be the same as the video.
5 lbs peeled and cooked potatoes
1/2 cup butter
4 oz cream cheese
2 cups sour cream
1 tsp onion powder
1 tsp garlic powder
2 cups shredded cheese ( I used sharp cheddar but I always just use whatever cheese I have on hand so use any kind you like)
1 cup cooked and chopped bacon
mix everything together and bake at 350 for about 20 minutes. Top with more chopped bacon and diced green onions
It's ready to eat or you can let it cool completely and freeze. Skip the 20 minutes in the oven if freezing. To re heat, thaw completely and heat in the oven at 350 for about 20 - 30 minutes.
