Recipe:-

Ingredients:
- 10 to 12 Kashmiri dry red chilies
- 4 to 5 fresh spicy red chilies
- 2 stalks lemon grass
- 1 tbsp coriander stems or roots
- 2 inches ginger or galangal
- 8 to 10 cloves garlic
- 1 small shallot or onion
- 1 tbsp salt
- 1 tbsp white pepper
- 2 tbsp coriander seeds
- 2 tsp cumin seeds
- 2 tsp lemon skin (yellow part only)
- 2 tsp miso paste (optional)
- 2 tbsp light soy sauce

Disclaimer: This is not the traditional way of making Thai curry with traditional ingredients. I make it with available substitutes that are easily accessible.

Method:
1. Roast coriander seeds, cumin seeds, and white pepper until fragrant. Transfer them to a mortar and pestle, add salt, and grind into a powder. Alternatively, you can use a mixer jar, but achieving a smooth grind with other ingredients can be challenging.
2. Soak the red dry chilies for 30 minutes. In a mixer jar, combine the soaked chilies with the roasted spice powder, lemongrass, coriander stems or roots, ginger or galangal, garlic, shallot or onion, lemon skin, miso paste (if using), and soy sauce.
3. Grind the ingredients into a smooth paste.
Curry Ingredients:
- 1/2 cup broccoli
- 1/4 cup baby corn
- 1/4 cup carrots
- 1 cup mushrooms
- 1/2 cup mixed bell peppers
- 150 g tofu
- 8 to 10 basil leaves (preferably Thai basil)
- 1 + 1/4 cup coconut milk
- 1 cup water (or as required)
- Palm or brown sugar to taste
- Salt to taste
- 1 tbsp tomato paste
- 2 tbsp Thai curry paste (or as required)
- 1 tbsp soy sauce

Method:
1. In a wok, heat 1/4 cup of coconut milk on medium flame until oil separates from the milk slightly.
2. Add the homemade curry paste, cook until fragrant, then add tomato paste for an added umami flavor.
3. Pour in the remaining coconut milk and water, stir well. Add baby corn and broccoli, cook for 2 to 3 minutes.
4. Introduce other veggies of your choice, then add salt, brown sugar, and soy sauce. Stir well, cover, and cook for 10 minutes on low flame to prevent coconut milk separation.
5. Once veggies are cooked, add tofu and basil. Stir and cook for an additional minute.
6. Serve the curry hot with steamed white rice.
