This 100 year old recipe was given to me by my Mother in law who received it from her Mother and gave me permission to share it with you.
In this video, we're diving into the rich culinary heritage of our family with a timeless classic - Authentic Chicken Cacciatore Recipe. Passed down through generations for over a century, this dish carries with it the flavors and stories of our ancestors.

Chicken Cacciatore, or "hunter-style chicken," is a rustic Italian dish that celebrates simple ingredients and bold flavors. Slow-cooked chicken simmered in a savory tomato sauce with aromatic herbs and vegetables, it's comfort food at its finest.

The size of ingredients are for more than just two people..more like six so adjust accordingly.

Ingredients:
4 to 6 pieces of each Chicken thighs and drumsticks, you can use the breast but it does dry out a bit.
1 large red onion (sliced)
1 package of Mushrooms (sliced)
1 jar of Green olives
1 can black olives
1/2 jar Capers rinsed
1/2 lb. Prosciutto ( sliced thicker than usual)easier to slice when partially frozen)cut or large diced
1 large can San Marzano tomatoes
1 1/2 cups White wine
Four or five cloves Fresh garlic diced
Oregano, salt and pepper to taste.
Olive oil
Season chicken pieces with salt pepper and garlic powder, sauté in olive oil on all sides in a large pot or dutch oven(do not cook through) remove chicken
Add sliced onion, garlic, oregano (more olive oil if needed)
after it cooks a bit add half of the white wine and scrape bits from bottom of pot.
Add tomatoes and some water then put back chicken ,prosciutto and add olives, capers and bring to a boil, then lower heat and simmer until chicken is almost cooked.
Then add sliced mushrooms and the rest of the wine , simmer ..add salt and pepper to taste if needed.
Serve over spaghetti or fusilli pasta or whatever you prefer.
