Celtuce is a vegetable classically used in Asian cooking. I've always been surprised by how little they are eaten in the US. You can find them in practically any asian grocery store. It's crisp, crunchy, delicious, refreshing, can be made multiple ways, and is very cheap and healthy. My favorite veggie, and it could be yours too if you try these recipes.
