Salmon isn't a regular sushi ingredient amongst Edomae sushi however loved by millions of diners.

Q. EATING RAW SALMON FROM COSTCO SHELF IS REALLY SAFE?
I noticed from many comments here, that the quality of Salmon sold in COSTCO Japan may be a little different from COSTCO located in other counties. Personally we have never seen those Salmon so it's a little hard to say without seeing the actual thing....
Let me state that Salmon sold in COSTCO Japan is Norwegian Atlantic Salmon which is farmed. Due to what they are being fed, it is said that most of Farmed salmon does not have Anisakis.
(But of course, not 0%)
On a contrary, we must admit that wild salmon does have higher risk.
If you are using wild salmon, freeze it under -20degrees for more than 48 hours or for 4 consecutive days in a home freezer. This way Anisakis will die.
Having said that, most Salmon sold at local supermarkets are (at least here in Japan) delivered AIR CARGO Frozen. Therefore, job has already been done...

To answer your question COSTCO Japan's salmon - is completely safe to eat.
(FYI Salmon from Costco Japan is sent from Norway and it isn't frozen on the way)


Q. Isn't it better to Flash-freeze this salmon?
Flash-freezing is a luxury not all of us at home....or at least we don't😭 Although freezing can help kill bacteria/parasites such as Anisakis, normal home freezing also does it job.
This recipe was intended to solve the typical problem of freezing fish for sashimi at home...Many people come to me asking that they are scared of flavour being lost, and drips to come out of salmon if you home freeze it. By curing salmon first, these problem will solve as it lets out excess fluid inside of salmon..😘
(Of course if you do have flash freezing function in your fridge, do use it though. Why not😉)
