Gasket Dilemma

Had the machine work completed, cleaned, crank ground and polished and cylinders bored .030 over. I was told I didn't have to have the deck done because it was in spec and the gaskets are thicker so it will be easy to seal. I took it all home in a Jetta, put everything together Crank shaft pistons etc and then learned about Quench! I also found and my Rebuilder pistons having a shorter compression height than original!
IMPORTANT INFORMATION TO LEARN ABOUT!!! THIS is the area where horsepower in gained and compression ration is controlled and how efficient you will run on a given fuel.
I really didn't want to take everything apart and go back to a machine shop to have it decked to 0, then put it all back together again to be sure my quench was at 40 thou. So my solution will be a thinner gasket but that has some major drawbacks.
