Ingredients:

Ripe Bananas - 2 nos
Lime Juice - 1 Tsp
Jaggery Pwd - 1/2 Cup / 80g
Curd - 6 Tbsps / 90g
Neutral Oil - 6 Tbsps / 90g
Milk - 1/2 Cup + 2 Tbsps/ 150g
Atta/ Wheat Flour - 1.5 Cups / 200g
Baking Pwd - 2 Tsp / 7.5g
Baking Soda - 1 Tsp / 4.5g
Salt - 1/4th/ 1g
Vanilla - 1/2 Tsp
Chocolate Chips - 1/2 Cup / 100g

Walnut Crumble :

Atta - 6 Tbsps / 50g
Chopped Walnut - 6 Tbsps / 70g
Sugar - 2 Tbsps / 30g
Cinnamon - 1/4th Tsp
Melted Butter - 2 Tbsps
Salt - 1/4th Tsp

Process :
* Pre-heat the oven at 170C
* To make the crumble - to a bowl, add in some melted butter along with castor sugar, cinnamon powder, a pinch of salt & chopped walnuts
* Add in the flour in 2 to 3 parts & mix it well - keep it aside for later
* In a large bowl, sift in the wheat flour along with baking powder, baking soda & a pinch of salt - mix & keep aside for later
* To make the batter, add in peeled overripe bananas to a bowl along with some lime juice - mash it completely using a fork or a masher
* Next, add in the oil, curd & milk & whisk together all the wet Ingredients
* Sift in the dry ingredients into the wet ingredients in 3 parts - mix gently
* Before adding in the chocolate chips to the batter, coat them in a spoonful of the flour - this makes sure that the chocolate doesn’t sink at the bottom of the cake
* Add the coated chocolate chips to the batter & fold them in
* Transfer the batter to a greased & lined loaf tin - smoothen the top out with a spoon or a spatula
* Cover the top of the batter with some walnut crumble & press it down gently
* Bake the cake in a pre-heated 170C oven for 40-45 mins/ until a skewer inserted comes out clean
* Allow the cake to cool down completely, de-mould it carefully & slice it - Serve & Enjoy 🍌🍞
