Chola Vuna

Instructions:
Wash 2 cups Chola well and soak overnight with 4-5 cups water.
Boil with 3 cups water and add 1 tsp salt.
Cook on medium for 50 mins with lid on.
Wash once more.
In a wok, add some oil and 2 dry chili peppers, 1/2 tsp panch phoron, 1/2 cup sliced onion, 2 bay leaves, 2 cinnamon sticks, 3 (cracked) pods of cardamom.
Cook on medium.
When the onion looks glossy then add 1/2 tomato (sliced), then cover.
Stir and add 1/2 tsp turmeric, 1/2 tsp chili powder, 1/2 tsp coriander powder, 1.5 tsp cumin powder, and 1 tsp ginger garlic paste.
Stir again add a little water to prevent burning the masala.
Add 1/2 tsp salt
Add 1 boiled potato (cubed)
Add 1/4 cup water and cook on medium for 15 minutes
Add 1/2 cup sliced onion and cook for another 5 mins
Serve with a little lime juice, fresh sliced ginger, chopped mint, and cilantro.
