Hello everybody, thank you so much for watching the video.

In this video I am cooking a very traditonal meal - ASPIK. It´s an iconic meal full of great flavors and beneficial to you because of the great amount of natural collagen inside.

Recipe:
- 1,5 kilogram of pig feet, tail, knee, and/or skin (the amount and variation is up to your taste)
- 1 kg smoked meat
- 1 peeled onion
- 2 onions with skin
- 1 big parsley root
- 3 carrots
- 2 head of garlic
- 1tsp salt
- 1tsp whole black papper
- 5/6 pc bay leaf
- 10 boiled eggs for the filling in the end (cook separately)

The raw meat is enough to cook this dish but I personally like the flavor of smoked meat. The key is to use for 1 kilogram of meat 1,5 - 2 litres of water. If you have a small amount of skin and bone parts use less water to ensure the "jello" effect.
The raw meat is recommended to be boiled for 5 minutes before cooking the dish.
If you are using smoked meat be carefull with the salt.
Put everything except the carotts, eggs and 1 head of garlic in the pot and start the cooking. The cooking have to be done very slowly and do not cover the broth with the lid during the cooking process. The water can only slowly simmer. Hard boiling is not recommended. The cooking should be done for 3-4 hours minimum.
I do not supply the water during the cooking process. The foam and fat have to be taken off regularly for ensuring the clearness of the broth. After 3 hours of cooking put in the carrots and taste the broth. You can put more salt if needed.
When the carrots are done and you can see a very thin line of "skin" starting to form on the top on the broth you are almost there.
Turn of the fire and let the dish sit for 15-20 minutes. Take everything out and carefully rinse the broth.
Make sure you take off all of the meaty parts from the bones and put it in bowls. Use what you like from the dish. I personally use the meat and carrots. I cook some eggs for extra filling and I put raw garlic in the bowls too for extra flavoring.
Pour the broth in the bowls on top of the filling very gently.
Let it cool down completely and put it in the fridge overnight or at least 8 hours. The broth will firm slowly.
The next day you can enjoy the dish.
