Briam: Traditional Greek Roasted Vegetables

Well taking care of my adopted Italian grandmother she was walking America test kitchen and this recipe came up I looked it up and I made it not once not twice but I’ll make it a third time. This recipe is so easy so simple it was ingredients I didn’t even know I would think I’ve ever putting together, let alone, loving and enjoying and making multiple times I definitely recommend it shadow to my Italian grandma.

Really, briam is easy to make.And I’ll say this off the bat, if you don’t feel like arranging the vegetables beautifully in round rows, you can just just arrange them flat on your large baking pan and call it good.

If you don’t like onions, this is not for you don’t like tomatoes. This is not for you. If you don’t like olive oil, this is not for you now that we got that out the way you’ll need the following to make this delicious recipe.

2 zucchinis preferably green
2 pearl onions the big guys the white one
5 beefsteak tomatoes
4 cloves of garlic
2/3 cup of good quality olive oil
5 potatoes if using red potatoes
Sea salt

Preheat your oven to 450°

Cut everything to about a half inch thick. Don’t worry if they are not all uniform just do the best you can or use a mandolin safely.

Layer starting with potatoes and onions, zucchini and onions and tomato. Sprinkling a little oil on each layer in sprinkling a little ceasar.

Bake for 30 minutes covered with foil remove oil and bake for another 25 minutes.
