I love cinnamon rolls. I LOVE THEM. Haha. Anytime I pass a Cinnabon in a mall, I’m always tempted to walk right in. That’s why I had to include a cute cinnamon roll cookie to my Christmas cookie box this year! I always make cookie boxes for friends and family every Christmas. It takes me the whole week to make them and though I’m exhausted after making them, I love handing them all out! :D They make such great gifts.

I like to make larger batches of cookies so I doubled the recipe making around 70 cookies.
Ingredients:
Dough:
562 grams flour
1 teaspoon baking powder
1/2 teaspoon salt
1.5 cups (3 sticks) unsalted butter, room temperature
300 grams sugar
2 eggs, room temperature
4 teaspoons vanilla extract
Filling:
4 tablespoons unsalted butter, melted
100 grams sugar
2 tablespoons ground cinnamon
Icing:
240 grams powdered sugar
90 milliliters (6 tablespoons) milk
Splash of vanilla extract
