CAMPASPERO, SPAIN - Today we’re in the small village of Campaspero, Spain, about an hour and half north of Madrid. It’s very small, but the reason people come all the way here is to eat at Restaurante Mannix, a restaurant that’s known to serve some of the best fire roasted lamb in Spain! Today we also have the special opportunity to visit the factory of Joselito - widely considered to be one of the best Spanish hams in the world.

Restaurante Mannix (https://g.page/RestauranteMannix?share) - First lunch, and we saw a bit of the cooking process where they use locally raised lambs. The lambs are cooked in an adobe mud oven with orange fire wood. The result is that the lamb is insanely tender - they literally use a spoon to cut it up - and the skin is so crispy and juicy. Some of the best roast lamb I’ve ever had in my life. Restaurante Mannix is family run, and they are so hospitable and friendly. Price - €50 per plate of lamb

Joselito Jamon (https://www.joselito.com/en/home) - Next up we drove to Salamanca, Spain with Jose from Joselito. Joselito is known throughout Spain and the world for producing some of the best Spanish jamon in a natural way with no additives or preservatives. It was amazing to see the factory and the process that goes into it. The pigs are Iberico and 100% acorn fed. The taste is something truly magical.
