Ingredients:
* 1 or 2 Chinese Eggplants
* 1 T salt
* water
* 1/4 C cornstarch , to coat the eggplant
* 1 T Sichuan peppercorns
* 4 green onions , chopped
* 6 cloves garlic, minced
* 2 T minced ginger
* 10 dried chili peppers
* Canola oil

Sauce
* 1 T Balsamic vinegar
* 1 T light soy sauce
* 1 T dark soy sauce
* 1 T Chinese cooking wine
* 1 T oyster sauce
* 2 T sugar
* 1/2 C chicken stock (or 1/2 C water + 1 t chicken powder)
* 1 T cornstarch
