Ingredients for Barbacoa Enchilada Oaxaca Style 😋
4 to 8 Pounds of chuck roast or choice of fatty beef cuts
2 cups of water + Extra to soak chiles
4 guajillo chiles
3 ancho chiles
3 dry chipotle chiles or 3 canned chipotles in adobo sauce
1/2 large onion
1 tomato
5 garlic cloves
5 bayleaves
3 Tbsp apple cider vinegar or Pineapple vinegar
3 to 6 Tbsp pork fat or lard
1 Tbsp salt or 2 1/2 Tbsp chicken bouillon
1/2 Tbsp ground cumin
1/2 Tbsp mexican oregano
5 pieces of whole all spice or 1 tsp of ground all spice (pimiento dulce entera)
1/2 tsp of ground clove or 4 whole clove pieces
Optional avocado leaves, cabbage, and beef bone

Barbacoa Tacos
Barbacoa
Corn tortillas
Chopped onion and cilantro
Choice of green salsa

Slow cooker cook time 8 hours slow cook + keep warm 2 hours for extra tender street tacos babacoa
Instant pot Pressure cook 1 hour slow preasure release

Tips‼️
Have a lot of fun when making this recipe 😁
For extra tender street taco barbaco in the instant pot. Chop pieces of beef a lot smaller.
If you want to keep the pieces of beef larger; once the slow pressure releases cook another 45 minutes
I used 1 Tbsp of salt + 2 1/2 Tbsp chicken bouillon please adjust salt to your liking
