Ingredients:
- 1kg tangerine
- 500g sugar
- 1 lemon
Step by step:
- Bring the water to a boil.
- While the water is heating, remove the "green tails" (calyxes or sepals) from each tangerine.
- Place the tangerines in the boiling water for 5 minutes.
- After 5 minutes, retrieve the tangerines and replace the water.
- Reintroduce the tangerines to the boiling water for an additional 5 minutes.
- In the meantime, prepare cold water to cool the mandarins quickly.
- Once the tangerines have undergone a second boil, transfer them from the boiling water to a bowl of ice water for 10 minutes.
- After 10 minutes, cut the tangerines in half.
- Arrange the halves on the bottom of the pan.
- Sprinkle with part of the sugar.
- Place a second layer of tangerines.
- Sprinkle with the remaining sugar.
- Cover and leave in a warm place for 24 hours.
- After 24 hours, heat the pan over low heat and cook for 50 minutes without stirring.
- Extract the juice from a lemon.
- After 50 minutes, add the lemon juice and cook for an additional 5 minutes.
- Blend the mixture using a hand mixer.
- Transfer the completed jam into sterilized jars.
- Keep the jam in the refrigerator.
