Contemporary Mexican restaurant Suerte in Austin, Texas makes over 2,300 fresh corn tortillas each day. The restaurant starts by turning 60 pounds of corn into 120 pounds of masa in a process called nixtamalization. The masa is then used to make tortillas, tostadas, and tamales.
