This is not a tutorial on how to sharpen knives. This is simply a demonstration on the techniques and methods I have come to use over years of practicing and watching Youtube tutorials. It works for me and does not damage my knives. It is also efficient in terms of time.

Its always nice to have a screaming sharp knife, but most of the time, a really sharp knife will do just fine. It makes cutting safer in that it avoids slipping, and it also improves technique when cutting as you do not have to constantly adjust your grip to accommodate for a dull blade. P.S. I use Shapton Glass stones, they are splash and go so no need for soaking. I am seen sharpening my Tojiro DP Gyuto, my Wustoff Ikon paring knife, and my wife's Victorinox Fibrox Kitchen knife.
