Perfectly seasoned Korean Cucumber Salad that you can enjoy as salad or with cooked rice. Gluten-free, Oil-free, and Vegan.

Korean Cucumber Salad

1 cucumber
1 clove garlic, minced
1 green onion, chopped
½ tsp salt
½ T paprika
½ T turbinado sugar
½ T toasted sesame seeds

Cut cucumber in half in length way. If the skin is tough, you may peel the skin. Slice the cucumber as thin as you can (1/8 inches thin). Put sliced cucumbers and remaining ingredients. Mix well with hand. Serve as salad or serve with cooked brown rice. Yum yum!
