Okay first and fore most, I know authentic birria is made with goat. I have made it with goat before and it is a little too gamey for me. That being said, this beef version is incredibly warm, hearty, and versatile.
I ate this as a stew, taco, and ladled it over rice. All were equally delicious. Unfortunately I was not able to enjoy it the fullest since I could not, for the life of me, find queso de oaxaca. Nonetheless, this was a pretty simple dish to make. I usually have dried chilies stashed in my pantry and the rest of the ingredients were easily attainable (except the beef cuts were pretty pricey, minus the chuck).
