A dish that is very uniquely Thai and deeply embedded within the memories of anyone who has travelled to Thailand, pad horapa or pad grapow is a simple yet delicious meal. This dish is served everywhere in Thailand, on the streets in small carts and side stalls all the way to the highest ends of the restaurants and hotels. No matter where you find this dish, it will always have that supreme balance of spicy, salty, sweet and umami.
Here is the recipe for a serving of 3-4 people:
1lb ground pork, chicken or beef
1/2c yardlong beans
1/2c chicken stock
3-4 eggs (1 egg per serving)
1/2c Thai sweet or holy basil
1/2 cup red onion or shallot
3TB garlic and chili pepper mix(pounded in mortar and pestle or minced):
6-10 cloves garlic
5-10 Thai chili peppers
Seasoning sauce:
2TB fish sauce
2TB oyster sauce
2tsp light soy sauce
2tsp sugar
