Hiya :)
Today I made a batch of coronation chicken! Created back in 1953 for the Queens coronation…and still very popular to this day. It’s basically a curved chicken salad…and it’s delicious :) Fantastic on a baked potato, sandwich or even on it’s own with some leafy salad. Everything I used will be listed below.

What did I use?
A large frying pan and a medium frying pan

Adult servings-
3 - 4 adults as a baked potato topper or sandwich filling

How long?
10 minutes prep and 15-25 minutes cooking time

Ingredients used -

* 2-3 Chicken breasts
* 500ml (17 oz) Chicken stock
* A large knob of butter (or oil) for frying
* 1 Small onion - finely diced
* 1-2 Bay leaves
* 1 Tablespoon mild curry powder
* 1 Teaspoon Turmeric
* 1/2 Teaspoon brown sugar
* 1 Tablespoon tomato puree
* 60ml (2oz) Red wine
* 60ml (2oz) Water
* 200g (7oz) Mayonaise
* 125g (4.4oz) Creme Fraiche
* 1/2 Tablespoon lemon juice
* 2 Tablespoons dried apricots - chopped
* 2 Tablespoons sultanas
* Salt & pepper to taste
