In February you can start to begin sowing vegetables on mass.
It's still cold though so make sure you germinate them in doors and bring them back in doors if there is a forecast of frost.
Radishes, spinach, beetroot, spring onions and rocket are all vegetables that I'm sowing in February!
However don't forget you could sow lettuce and some warm loving plants that need a long growing season like Tomatoes and Chilli's.
