yummy harvest scramble!
ingredients:
cubed sweet potato
cubed ham
diced yellow or white onion
2 eggs
minced garlic
olive oil, salt, pepper
instructions: put pan on medium heat with olive oil, add minced garlic and sweet potato, ham, and onion onto pan and let it cook (i put on the lid so the sweet potato is soft), then add 2 eggs and scramble together. add salt and pepper, and plate with toast with butter & jam, and fruit!
