Did you know cauliflower is packed with fiber, making it great for lowering the risk of serious illness? Ceres' nutrition staff Kim and Lauren are making Turmeric Roasted Cauliflower for National Nutrition Month. Recipe below:

Ingredients:
¾ cups yellow onion, cut in ½ and thinly sliced (thinner the better)
¼ cup olive oil
1 tsp apple cider vinegar
¾ tsp turmeric
¼ tsp sea salt
½ tsp fennel seed, ground
½ teaspoon garlic powder
¼ tsp ground black pepper
1 head cauliflower, cut into bite size pieces (about 6 cups)

Directions:
1. Preheat oven to 350°F
2. Mix the olive oil, vinegar, turmeric, sea salt, fennel seed, garlic powder and black pepper in small bowl. Whisk together.
3. Toss the onions with the cauliflower in a large bowl.
4. Add oil mixture to the cauliflower and onions, mixing thoroughly to coat
5. Spread the coated cauliflower and onions onto parchment lined baking sheet.
6. Place baking sheet onto middle rack of oven
7. Bake for about 10 minutes, then move the cauliflower around on the sheet and return to the oven. Check every 5 minutes and cook until evenly browned. The cauliflower should be tender, not crunchy.
