Today, we'll discuss how to make a classic vodka pasta sauce

Ingredients:

3-5 Cloves Garlic, sliced or minced
2 Large stems of Basil
4 Tablespoons Vodka
1 (28Oz) Can of San Marzano Tomatoes
1 Cup of Heavy Cream
16 Ounces Pasta
Salt
Pepper
Basil for Garnish
Parmesan Cheese for Garnish

Directions for Sauce :

1. Slice Garlic and set aside for later. Now we need to blend the tomatoes. Add one can of San Marzano Tomatoes into an immersion blender and blend for 1 minutes. Strain the Tomato sauce into a separate bowl. This process will create a creamy sauce as the tomato pulp and seeds have been removed

2. Turn the stove to medium heat and place a couple tablespoons of olive oil into a medium sized frying pan. Add the garlic and saute for 2-3 minutes. Add in the basil and continue to saute for another minute

3. Turn the heat off of the stove, and add the Vodka. Let this simmer for a few minutes while the alcohol begins to burn off. Then, turn the stove back to medium heat and reduce until there is a little liquid left. Add the tomatoes and bring the sauce to a simmer. At this point, begin to heat your water for the pasta and add once boiling.

4. Simmer the sauce until it leaves streaks in the pan (about 15 minutes). Then, remove the basil and add the heavy cream to the pan. You can also use half and half if needed. Stir the sauce and tastes for seasoning. Let this simmer for a minute or so and then it is complete

5. For plating, I like to add the pasta into a metal mixing bowl and then add the sauce by the spoonful. This helps create even portions and ensure each pasta noodle has plenty of sauce. You can also add additional salt and pepper if needed.

6. Add the completed pasta into a separate bowl, and garnish with parmesan cheese and fresh basil. Enjoy!
