COLD APPETIZERS (Salad/Fruit/Cheese & Meat Platter)
MIXED SALAD;
3 cups loose greens - consist of mix of rocket, chicory, radicchio, frisse, red/green leaf chard or any mixed greens you prefer (wash
1 cup cherry tomatoes (can be cut into halves if large)
1 cucumber thinly sliced
1 large carrots shredded
1/2 purple onion finely chopped (I avoided this due to children in our guests group)
DRESSING:
1/4 cup Olive oil
2 cloves of garlic pressed
1/4 teaspoon Tarragon
1/4 cup Red wine vinegar
1/4 cup White wine vinegar
1/2 lemon (juice squeezed)
Salt & Pepper to taste
Whisk until creamy (place over salad only at serving time)

FRUIT PLATTER
1/4 melon (any kind) peeled and cubed to bite size
1/2 pineapple peeled and cubed to bite size
2 packages strawberries washed and dried (whole)
3 kiwi - peeled and sliced
Arrange on platter as shown for nice presentation & CHILL

MEAT /CHEESE- NUTS - Dried FRUIT
Ingredients:
NUTS/DRIED FRUIT
3 small serving dishes (roasted corn nuts/prunes/combo of raisins, walnuts, almonds, sultanas)
PLATTER:
2 types of sliced cold cuts about 250grams of each assembled on the platter
(I've used Iberian Portuguese Presunto and Salpicao) you can used whatever type you like)
2 types of cheese cut into small bite size (1 cup) I've used Portuguese Flamingo and cheddar.
1 small package of unsalted square crackers (your choice)
1 small package of unsalted thin bread sticks
1/2 cup Cherry tomatoes
Fresh parsley for garnish

You can add a few chip bowls / whatever your pantry has in stock
