⨠Ingredients:
1 30 oz. MOWI Atlantic Salmon,wiped dry with a paper towel Kosher salt
Freshly-ground black pepper
1 fennel bulb
1/2 large sweet onion, like Vidalia
1 large orange
1 lemon
2 tbsp. chopped fresh parsley
2 tbsp. olive oil
â¨Directions:
1.â â Place your oven rack to the second highest level (just below the top level) and pre-heat your broiler.
2.â â Put parchment paper on a baking sheet and place salmon on top. Season lightly with salt and pepper.
3.â â Use a mandolin or a chefâs knife to thinly cut fennel and onion. Place in a medium bowl.
4.â â Segment orange and lemon by cutting off the peel and cutting between the pith lines. Chop up segments and add with any additional juices to the fennel mix. Mix in chopped parsley and olive oil and season with 1 tsp. salt and 1/4 tsp. black pepper.
5.â â Sprinkle the fennel salad on top of salmon side and broil in oven until fennel begins to blacken and salmon is fully cooked, about 10-12 minutes.
Note: If the fennel is burning and the salmon hasnât fully cooked, bring down your salmon to a lower level to allow salmon to finish cooking.
6.â â Serve immediately on a platter. Serves 4-6. ENJOY! đ
