Aloo Gobi (cauliflower and potatoes) is a very popular Indian dish that is cooked with tomatoes, ginger, garlic and spices like asafoetida, cumin, coriander and turmeric. It is a vegan dish that is so satisfying and packed with flavors. Serve it with basmati rice, roti, or naan and enjoy this goodness in the comfort of your home!

Recipe : Aloo Gobi (Cauliflower and Potatoes)
Ingredients :
-500gm cauliflower (cut into bite size pieces)
-7-8 baby potatoes (cut into fours)
-2 tablespoon minced garlic
-2 tablespoon minced ginger
-1 grated tomato
-3 green chilies (chopped or whole) optional
-1 teaspoon cumin seeds
-1 teaspoon red chilli powder
-1/2 teaspoon black pepper powder
-2 teaspoon turmeric powder
-2 teaspoon coriander powder
-1/4 teaspoon heeng (asafoetida)
-1/3 cup mustard oil ( or any oil )
-salt according to taste

Process:
-In a wok or pan, add oil ( make sure the oil gets smoky hot before you add any ingredient to it)
-Once the oil is hot, add potatoes, cumin seeds and heeng (asafoetida)
-Stir for 2-3 mins on med flame
-Add the cauliflower, minced ginger and minced garlic and sauté for 8-10 minutes on med/high flame to get a nice roasted color on the cauliflower
-Add the green chilli, you can cut them small or keep them whole (optional)
-Once you notice the cauliflower and potatoes are little brown in color and have a little char on them , you are ready to add the dry spices
-Now add all the dry spices and add salt according to your taste
-Give it a good mix to incorporate all the spices together
-Add the grated tomato and stir and mix it evenly
-Cover and let it cook on low/med flame for 15 minutes or until the potatoes and cauliflower are soft and cooked through ( make sure not to overcook the cauliflower, cook it only until its tender but still holds its shape)
-After 15 minutes, turn off the heat
-Garnish with lots of cilantro
-Serve with your favorite basmati rice, roti or naan

Notes:
-Adjust spices according to your taste
-You can use 2-3 regular potatoes instead of baby potatoes
-You can substitute the mustard oil with any preferred oil of choice
