A quick and easy way to cook traditional Moroccan Harcha / Mahracha with simple ingredients that create incredible results.
Overtime I will upload several different methods of creating Mahracha using various simple ingredients.
The original, traditional Moroccan Harcha is just with:
Semolina, salt, vegetable oil and lukewarm water.

Harcha / Mahracha means rough. It is given this name as on the outside it is coated in semolina to give it a rough and crispy texture.Yet, on the inside it is soft and spongy.
Most Moroccan families have Harcha/Mahracha for their breakfast with olive oil and Moroccan mint tea. I still remember the smell of harcha and mint tea in the morning from my chilhood.

Ingredients

600g of coarse semolina
(500g for baking and 100g for coating on)
50ml of olive oil
50ml of melted butter
1 teaspoon of salt
1 teaspoon of garlic powder
400ml of lukewarm water
20g of chives
