This is my quick and easy recipe on how to make the perfect roast potatoes!

INGREDIENTS
500g medium-sized russett potatoes
200g goose fat
3 garlic cloves
3 sprigs of rosemary
3 sprigs of thyme
1 tbsp of cornflour
1 tsp of olive oil
1 tsp garlic powder
Salt
Pepper
METHOD
1. Peel the potatoes
2. Chop into halves
3. Place in cold water for 10 minutes to remove the starch
4. Put the goose fat into a baking dish
5. Pre-heat in the oven at 180c/360f
6. Boil the potatoes for 10 minutes, add salt
7. Drain the potatoes and pat dry with a paper towel
8. Add olive oil, salt, black pepper, garlic powder and cornflour
9. Shake vigorously to coat and fluff the potatoes
10. Put the potatoes in the hot goose fat
11. Add garlic cloves, rosemary and thyme
12. Stir and put in the oven for 50 minutes
13. Remove from the oven half way through and stir
14. Return for a final 25 minutes
15. Season with salt
