Today's recipe is for a yogurt soufflé that is delicious freshly baked.
The trick to a soufflé with a sizzling texture is to mix the flour into the meringue.
Be careful not to overmix the meringue and egg yolks to create a fluffy and delicious soufflé☺.

▷Ingredients (Φ10 cm ramekins)
20 g non sugar yogurt
2 egg yolks
1/2 tsp vanilla extract (or vanilla essence)
2 egg whites
30 g granulated sugar
10 g cake flour or rice flour

unsalted butter
granulated sugar
powdered sugar

▷How to make:
1. Grease a ramekin with butter and dust with granulated sugar.
2. Mix the non sugar yogurt, egg yolks, and vanilla extract.
3. Add the granulated sugar to the egg whites in 3 batches to make a meringue. Shake the cake flour and add it to the meringue mixture, mixing until powdery.
4. Pour the meringue mixture into the cocotte, smooth the surface, and bake in a preheated oven at 200℃ for 12 to 15 minutes. Sprinkle with powdered sugar if desired.
