In this video, I'm going to show you how to make a Healthy Chicken Parmesan Meal Prep clocking in at only 422 Calories!

Chicken Parmesan Meal Prep Recipe
4 Servings
447 Calories - 13g Fat - 44g Carbs - 36g Protein

Ingredients
1lb Boneless Skinless Chicken Breast
45g Bread Crumbs
15g Parmesan Cheese - Grated
120g Pizza Mozzeralla cut to 4 30g pieces
180g Gluten Free Pasta of choice
1 tbsp butter
28oz Can Whole San Marzano Tomatoes
2 Tbsp Garlic Powder (divided in half)
1 Tbps Onion Powder
1 Tbsp dried Oregano
Salt/Pepper to taste

1. Preheat Oven to 450 degrees.

2. Cut chiekn breat through the middle length wise giving you two thinner breast. If you aren't comfortable with this technique, pound out to about 1/2 inch thick and cut in two.

3. Combine Breadcrumbs, Parmesan Cheese, 1 Tbsp Garlic Powder, salt and pepper and dump onto a plate. Melt 1 Tbsp of butter and brush onto one side of chicken breast. Place Chicken breast on breadcrumb mix until one side is covered. Repeat process until both sides of all chicken breast are covered.

4. Place onto a parchment lined baking sheet and bake at 450 degrees for 20-25 minutes or until the chicken reads 165 internal temp. Flip half way through.

5. While chicken bakes, combine 28oz Can of San Marzano Tomatoes, 1 Tbsp Garlic powder, 1 Tbsp onion powder, 1 tbsp oregano and slat and pepper to taste into a food processor. Blend until fully pureed.

6. Once chicken is cooked, remove from oven and top with 1 tbsp marinara, 1 30g slice of cheese. Place back in the oven for 3-5 minutes until cheese begins to melt and take on colour.

7. Cook pasta 1 minute less than package instructions of Al Dente.

8. Place 45g pasta into 4 containers. Top with more marinara and place chicken on top.
