We are late in September now here in Canada and we’ve since seen a few nights of frost. The potato plants have really settled down and it’s a beautiful weekend to get the fruits out of the ground and into storage for the winter ahead. I have a DIY cellar to keep veggies fresh over the winter months.
Right off the bat, the shovel seems like a good tool to loosen the soil to find the potatoes but I think a pitch fork would have been better. In any case, let’s collect those potatoes. At this point I pick the potatoes and place them in a large bin. I have 2 types; a white Jennifer and a Russian Blue.
Once they are harvested, I let them sit in the sun for 30 minutes so the skin can dry to help seal off the fruit. I then place them in storage bins in their own garden soil. I start with a layer of loam followed by a layer of potatoes until the bin is full.
From here, I place the bins in my cellar. It’s constructed of Styrofoam and wood. It’s placed on the floor in my garage and the bottom of the cellar is open and exposed to the concrete floor. The garage is heated to 10 degrees Celsius but the outside temperature can be as low as -40. The concrete pad in the corner will average around +5 throughout the season, so I am taking advantage of that cold temperate to bring the cellar temperature down where I can preserve the potatoes for the winter season without risk of them freezing or getting too warm.
I keep an eye on the temperature and the humidity throughout the winter. I like to keep the humidity in there at about 80-95%. If it gets low, I pour some water on the soil and it soaks into the soil and brings the humidity back up for a couple week.
The cellar is cheap and an easy solution to keeping veggies throughout the winter months.
