Sausage Vegetable Soup Recipe That Will Warm Your Soul

Michelle started making this soup recipe several years back, it is truly amazing and has become a family favorite. It is definitely a different twist on vegetable soup, but we love it and we hope you do too!

• 1lb Italian Sausage
• 4 Medium Zucchini
• 28 oz. Can Crushed Tomatoes
• 14.5 oz. Can Diced Tomatoes
• + Once Can of Water
• 8oz. Bag of Carrot Matchsticks
• 1 Cup of Brown Instant Rice
• 1 15 oz. Can of Garbanzo Beans
• 1 9oz. Bag of Fresh Spinach
• 1 Sweet Onion Diced
• 2 Tbsp of Olive Oil
• 1 Tbsp of Minced Garlic
• 1 Tbsp of Italian Seasoning
• 1 Tbsp of Garlic Powder
• 1 Tbsp of Onion Powder
• 1 Tsp of Black Pepper
• 1 Tsp of Salt
• 1 Tsp of Cajun Seasoning
• 8 Cups of Chicken Stock

Dice up your sweet onion and cube the zucchini. Add the oil to a large pot on medium heat. Put in your onions, zucchini and carrots. Simmer for 10 minutes and then add all of the seasonings including the minced garlic. Then add the tomatoes, water, beans and stock, bring to a simmer. Once the soup is at a simmer add the sausage and rice. We use link sausage and remove the casing, you can certainly use loose sausage. After 10 minutes add the spinach, let simmer for 10 more minutes and remove from heat to cool slightly.
