Recipe:
BBQ Mini Meatloaves
2 lbs ground beef
2 eggs
chopped onion & garlic or whatever seasonings you'd like
1 cup finely shredded cheese
1 cup BBQ sauce (or omit if you don't like BBQ)
1 zesty Italian seasoning packet

mix all ingredients in a bowl
form mini loaves and put on a baking sheet
Bake at 400 degrees for 30 minutes
Glaze loaves with BBQ sauce or Ketchup on top
Bake for an additional 15 - 20 minutes

For Potatoes and Green Beans I just mixed together 2 lbs. extra virgin olive oil, a heaping teaspoon of Italian seasoning and salt & pepper in a bowl and then mixed in the bowl with potatoes and beans. You could use any veggies for this.
