In this video, I am showing how to make four side dishes using different kind of (Japanese) mushrooms: Ohitashi (cold marinate), grilled mushroom, stir fry with butter & soy sauce and Tempura. I am using and also explaining five types of mushrooms; Oyster mushroom, King trumpet mushroom (aka Eryngii mushroom), Shiitake mushroom, Shimeji mushroom and Enoki mushroom. These are very common mushrooms in Japan.
They are all vegetarian and two are vegan. The other two can be made vegan by taking out butter and egg.

In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.

Ingredients for side dishes using Mushrooms
Ohitashi
- Mushroom of your choice
- Ponzu:
Soy sauce 1 Tbsp
Lemmon juice 1 Tbsp

Grilled mushroom
- Mushroom of your choice
- Ginger sauce:
Soy sauce 1 Tbsp
Ginger 5-10 g

Stir fry
- Mushroom of your choice
- Scallion 1 Stalk
- Garlic 1 clove
- frying oil 1 Tbsp
- Butter 5-10 g
- Soy sauce 1 Tbsp

Tempura
- Mushroom of your choice
- Tempura batter:
Egg 1
Water 200 ml
Flour 200 ml (100 g)
Baking powder 1/2 Tsp
