Today, we'll attempt to cook Lamb Chops from "Taste: My Life Through Food" written by award-winning actor, Stanley Tucci. This dish is simple yet absolutely delicious

Ingredients:
8-12 lamb chops, salted an hour before cooking
3 garlic cloves, halved
1/2 cup white wine
1/3 cup water
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
olive oil

1. Begin by trimming your lamb if you have chosen a french cut rack. Remove the fat cap and excess fat around the bones. You can keep this for ground lamb if you wish. Salt your lamb chops with kosher salt about an hour before cooking

2. Prep the garlic, rosemary and thyme. Then take a large cast iron skillet and place over low heat. Add the halved garlic and cook for about 3 minutes. This will pull some of the garlic flavor into the oil, in which we’ll cook the lamb. Remove the garlic and raise the heat to medium-high. Add your lamb in and sear for about 2-3 minutes per side. You can complete in multiple batches as you do not want to overcrowd the pan

3. Once your lamb has finished, place into a separate pan/bowl and let the cast iron cool for a few minutes. Then add the white wine and water and reduce/deglaze for a minute. Then return the garlic to the pan along with your chopped herbs. Cook for a minute or until the sauce has thickened slightly. Pour the sauce over the lamb chops and tent with aluminum foil for 5 minutes

4. Remove the foil and plate the lamb with extra sauce and rosemary for garnish. I would recommend 3-4 chops per person depending on the size. Enjoy!
