I made a delicious egg tart with sweet potatoes.
By making tart cups with sweet potatoes, it is a healthier and more filling snack.
Sweet potatoes are delicious just by roasting them,
Enjoy it in a variety of flavors.
It's delicious even if you keep it in the refrigerator.
Store in the refrigerator for 3 days, or freeze for longer.


*** Measurements are using scales (g), tablespoons (Tbsp), and teaspoons (tsp) (not measuring spoons)

[8 servings]
✤ Sweet Potato Cup
- 2 Sweet potatoes (390g/peeled weight)
- 20g (1Tbsp) Room temperature unsalted butter
- 20g (2Tbsp) Allulose or sugar
- 20g (2Tbsp) Potato starch

✤ Egg filling
- 50g, 3 egg yolks
- 25g (2.5Tbsp) Allulose or sugar
- 1 pinch of salt
- 3g (1tsp) starch powder
- 3g (1tsp) vanilla oil
- 80g milk
- 100g Heavy cream

✤ TIP
- The moisture level of sweet potatoes varies depending on how they are cooked. This recipe is suitable for the microwave.
-If the moisture is insufficient, add water or milk.
