Crispy Rice and Egg and Chicken, (Tahchine Morgh)
Today, I bring you a delectable recipe from Persian cuisine. Tahchin, a Persian culinary masterpiece, combines fragrant saffron-infused rice, tender chicken, and a crispy golden crust for a delightful and savory experience.
It could be a great choice for vegetarians if cooked without meat.
📕Recipe:
Ingredients:

• 3 cups of rice
• 3 eggs (2 egg yolks, 1 whole egg)
• 500g chicken breast or half a chicken
• 400g Greek yogurt
• 2 medium-sized onions (1 diced, one thinly silvered sliced)
• 1 teaspoon ground saffron
• 1/2 cup of ghee
• 6 tablespoons extra virgin olive oil
• 1 cup of barberries( you could buy them from Persian super markets)
• 1 tsp of honey, or 2 tsp sugar
• Salt and black pepper
• Silvered pistachio for garnish(optional)
⁕Cooking Process:

1. Begin by washing the rice and soaking it with 2 teaspoons of salt for a while.
2. Infuse saffron directly and let it steep using 2 ice cubes to bring out the color.
3. Saute diced onions with 1 tsp olive oil in the pot until golden. Add cut chicken breasts, salt, and 1/2 tsp turmeric. Pour in a cup of water and cook until the chicken is fully cooked, leaving 1/3 cup of broth.
4. Cut the onion lengthwise into silvered slices and sauté for one minute on medium heat. Stir, then add 3 tbsp of olive oil and caramelize on medium-low heat.
5. In a very large bowl, whisk together egg yolks and an egg. Add Greek yogurt, saffron-infused ice (reserving 1 tsp for barberries), and salt. Mix thoroughly.
6. Shredded cooked chicken breast, mix with the remaining chicken broth, and then add caramelized onions and 1/2 cup of the saffron yogurt batter. Mix and set aside.
7. In a large pot, bring water to a boil, add rice and salt, cook until semi-done, then strain.
8. Mix the semi-cooked rice with the egg, yogurt, and saffron batter.
9.Grease a small nonstick mold with ghee. Alternatively, you can use a large nonstick springform pan or a cake pan. Add a layer of the rice mixture, followed by a layer of the chicken mixture. Cover with the rice mixture, pressing it down.
10. Cover with foil and bake in the preheated oven at 400°F on the middle rack for 1 hour for large pan it should stay in the oven15 more minutes.
11. Wash barberries, soak them in water for 5 minutes, then rinse and strain. In a small pan on medium heat, add 1 tbsp ghee, then add barberries and sauté while stirring (as barberries burn quickly). You can do this process on low heat to prevent burning. Add 1 tsp honey or 2 tsp sugar, stir, then add 1 tsp of saffron-infused ice and 1 tsp water. Mix for a few seconds and remove from heat.
12. Pull the Tahchin out of the oven, serve, and garnish with barberries and silvered pistachios, as shown in the video. As a side, you can serve it with Persian cucumber yogurt, Greek yogurt, or any kind of vegetable salads you like. Enjoy this beautiful and delicious Persian dish.
