Probiotic water made from fermented sprouted wheat berries can be beneficial for several reasons:

Nutrient Content: Sprouted wheat berries are rich in nutrients such as vitamins, minerals, and antioxidants. Fermentation can increase the bioavailability of these nutrients, making them easier for your body to absorb and utilize.
Digestive Health: The probiotics in fermented foods can support a healthy balance of gut bacteria, which is essential for proper digestion and overall gut health. This can help alleviate issues like bloating, gas, and constipation.
Improved Immunity: A significant portion of your immune system is located in your gut. By promoting a healthy balance of gut bacteria, probiotic water made from fermented sprouted wheat berries may help strengthen your immune system and reduce the risk of infections.
Potential Anti-Inflammatory Effects: Some research suggests that certain strains of probiotics found in fermented foods may have anti-inflammatory properties. Consuming probiotic water regularly may help reduce inflammation in the body, which is associated with various chronic diseases.

Here's a simple guide to making probiotic water using fermented sprouted wheat berries in about 6 days:

Ingredients:
Organic wheat berries (any kind: einkorn, spelt, red, soft, kamut, etc.)
Filtered water (unchlorinated)

Equipment:
Half-gallon mason jar (with spout lid or regular lid + cheesecloth & rubber band/coffee filter)

A dish rack or cookbook stand (to tilt jar for draining)

Instructions:
Day 1: Soak
Fill your clean half-gallon jar ¼ full with wheat berries.

Fill the rest of the jar with filtered (non-chlorinated) water.

If using tap water, let it sit out for 24 hours beforehand to evaporate chlorine.

Let the berries soak for 8–10 hours.

After soaking, drain the water, rinse the berries with fresh water, and drain again.

Tilt the jar upside-down at an angle (on a stand or dish rack) to allow excess water to drain and air to circulate.

Days 2–3: Rinse, Drain, Tilt
3 times a day, do the following:

Rinse the grains with fresh filtered water.

Drain well.

Tilt the jar again for airflow.

Berries should begin to sprout during this time.

Day 4: Final Rinse + Soak
Rinse and drain the sprouted wheat one last time.

Fill the jar to the top with fresh filtered water.

Let it soak for 48 hours at room temperature.

Day 5: First Batch
After 48 hours of soaking, pour off the water into a clean storage jar or bottle — this is your first batch of probiotic water.

Refill the sprouted wheat with fresh filtered water and let it soak again for 24 hours.

Day 6: Second Batch
Pour off the second batch of probiotic water into storage.

Refill the jar once more with fresh filtered water for a final 24-hour soak.

Day 7: Final Batch & Finish
Drain the third and final batch of probiotic water.

Discard the sprouted wheat berries (compost, feed to birds, etc.).
