Polish Szpajza (Lemon Gelatin):
Ingredients:
5 eggs
5 Tbs sugar
5 tsp gelatin
½ cup of water
Juice of 2 lemons
Fresh/dried fruits, nuts, chocolate, yogurt (for topping, optional)

Directions:
Boil the water and add the gelatin, then add lemon juice - leave until cool
Separate egg yolks from whites
Mix yolks with sugar
Beat egg whites to a thick "cloud"
While mixing whites, very slowly add yolks
Still mixing, add gelatin mixture
Pour the mixture into 6 smaller bowls
Add decoration and put the desserts into fridge
Chill until thick and set, then serve!
