-I’m using the vitamix a3500
-As my basket I’m using Artisanal Kitchen Supply® 6 qt. Enameled Cast Iron Dutch Oven from bed bath and beyond

Tip: if you want your purple onions to be super soft, add them to your oil while the oil is heating up

Ingredients: makes about 24 tacos
24 corn tortillas
1 lb your choice or chorizo my fave - ...Johnsonville Chorizo Ground Sausage
4 medium potatoes
1 red/purple onion
1 1/2 cup vegetable oil
1/4 white onion
3 New Mexico or guajillo chile pods
5 chile de árbol
3 garlic cloves
2 cloves
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp black pepper plus extra to season potatoes
1 1/2 tsp salt plus extra to season our potatoes

Green tomatillo salsa:
6 tomatillos
4 chile serranos
1/4 white onion
2 garlic cloves
2 tbsp of water
Small bunch cilantro
Salt to your liking
