"Jaggery is one of the original forms of sugar, I love the idea of turning it into a caramel that can adapt itself to many recipes and moreover adds depth and richness to both desserts and savory dishes alike."

Jaggery Caramel Ingredients:
1 cup Jaggery, roughly cut
1 cup coconut sugar
1 small can of coconut cream
1 cup water
1 big pinch of salt

Recipe:
Combine the sugars and water in a pot. On medium heat, until the liquid is reduced by half, add the coconut cream and continue to cook for an additional 10 minutes. Turn off from the heat and stir in the salt, let it cool and store in a clean jar in the fridge.

Cook’s Note: you can substitute the coconut sugar with regular sugar if you want, but the coconut sugar adds additional flavor.
