I'm BooneBake.
Today I made a fruit soufflé Dojima roll cake.
This time, it's been a while since I made a soufflé cake using cooked dough .
It's very soft and fluffy.
Since I have a convection oven, I also recorded a video on how to prevent it from exploding, so please watch until the end.
Please refer to the subtitles as it also indicates the temperature when using a deck oven and when you just want to bake it using convection.
The combination of milk-flavored cream and fruit was also very good.

● Soufflé Dojima Roll Cake
(Mold size 25cm*25cm)
80g cake flour
3 yolks (54g)
1 egg
50g of milk (A)
50 g unsalted butter
5ml vanilla extract (1tsp)
20g of milk (B)
3 egg whites (105 g)
80g sugar
● Milk Cream
150g heavy cream (2/3 cup)
15 g sweetened condensed milk (1 Tbsp)
7 g sugar
● Syrup
30g water
20g sugar
A little liqueur (optional) - kirsch, rum
