🥣 Ingredients:
1lb | 500g | 3 medium sweet potatoes
1oz | 30g | 2tbsp dairy-free butter
6oz | 250g sliced leeks
12oz | 350g raw spinach
1 minced garlic clove
salt and black pepper for seasoning
12oz | 350g raw spinach

🥣 Cream ingredients:
5oz | 130g | 1 cup cashews
3tbsp nutritional yeast
9oz | 250ml | 1 cup vegetable stock
5oz | 150ml | 2/3 cup dairy-free milk
1tsp Dijon mustard

🧑‍🍳Cooking tips:
❗If you prefer regular potatoes to sweet potatoes you can use them instead.
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute vegetable stock for water.
