Carrot walnut cupcake🥕

Ingredients:
🔹3 eggs
🔹Sugar 150 g
🔹Vegetable oil 80 g
🔹Flour 180 g
🔹 Zest of 1 orange
🔹Carrot 200 g
🔹Walnuts 100 g + something for decoration as desired
🔹A pinch of salt
🔹 Baking powder 10 g
🔹Cinnamon, cloves, nutmeg as desired (I added a spicy mixture of 1 tablespoon)

For the cream:
🔹Cream cheese 200-250 g
🔹Icing sugar 50-65 g


Preparation:
🔹 Grate the carrot on a grater
🔹Rub orange peel
🔹Chop the nuts with a knife or in a grinder
🔹Mix eggs with sugar and shake a little
🔹Add vegetable oil and mix
🔹In a separate bowl, mix sifted flour, salt, baking powder and spices. We mix
🔹Add grated carrot, orange peel and chopped nuts to egg mixture. We mix
🔹Add dry ingredients and mix
🔹Pour the dough into a pan lined with baking paper and bake in the oven preheated to 180° for 45-55 minutes (I baked for 55 minutes in a 26*12 cm pan. However, if you use a round pan with a larger diameter it will take longer it less time. Check the readiness with a wooden skewer, it must be dry)
🔹For the cream, mix cream cheese and powdered sugar.
🔹Let the cake cool completely and spread all the cream on top using a “cap”. With chopped if desired
Decorate with nuts.
