Well, we did it. We've schemed up the most pineapply pineapple fried rice recipe of all time. Thank you, thank you! We're sure Soma would approve. This dish contains pineapple, is baked in a pineapple, and is then shaped like a pineapple. However, it won't turn you into a pineapple (that we know of). Amaze your friends with this visually stunning and mouth-wateringly delicious fried rice at a dinner party. Just sit back and watch as their minds (and maybe their clothes) are blown off in delight.

Prep Time: 35 minutes
Total Time: 55 minutes
Serves: 4 passionate taste testers.

Ingredients
1 Whole pineapple (including pineapple shell and leaves)
1 tablespoon sea salt, plus more if needed
2 tablespoons coconut oil
1 cup ground pork
1/2 cup ddiced white onion
2 carrots, peeled and diced
1 tablespoon oyster sauce
2 1/2 cups cooked white rice
1 tablespoon curry powder
1 tablespoon soy sauce
Pinch of freshly ground black pepper
2 large eggs
1/3 cup frozen peas
2 scallions, diced

1. Preheat the oven to 300 degrees F.

2. Cut off the stem of the pineapple, setting the leaves aside. Cut the pineapple in half vertically.

3. Scoop out the pineapple and dice the flesh into chunks. Sprinkle the sea salt inside both sides of the pineapple shell. Set aside.

4. Heat 1 tablespoon of the coconut oil in a large skillet or wok over medium heat. Add the ground pork and cook until browned, about 5 minutes. Add the pineapple, onion, and carrots. Stir-fry until the carrots are tender, and the onions are soft, 8 to 10 minutes. Add the oyster sauce. Stir the cooked white rice into the skillet, making sure the rice isn't clumpy and the mixture is well combined. Add the curry powder, soy sauce, and pepper. Continue to cook until the curry is fragrant and the rice is shiny, about 5 minutes.

5. In a separate small skillet, add the remaining tablespoon of coconut oil and scramble the eggs for 1 to 2 minutes until they are three-quarters of the way cooked. Combine the eggs with the pork and veggies, along with the peas and scallions, and mix to combine.

6. Transfer the fried rice from the skillet to the inside of the pineapple shells and bake on a baking sheet for 20 minutes. Take out of the oven to cool.

7. Fill u pa large oval bowl with your fried rice and pack it in tight to resemble the inside of the pineapple. Place a larger plate or serving dish on top of the bowl and flip the bowl over. Add the pineapple stem to the top of the fried rice to complete the look.
