Egg Veggie Boats Breakfast Recipe:
📕Ingredients:
•8 large-sized Tortilla bowls
•8 eggs
• 1 cup baby spinach
•1/3 cup of corn
• 1/4 cup of green peas
•50g feta cheese
•100g grated mozzarella
•1/2 tsp marjoram
•1/2 tsp garlic powder
•Black pepper and salt
For serving (optional):
•1 avocado
•Trio lettuce
•Balsamic glaze
•Sesame
Cooking Process:
1. Preheat oven to 325°F (for an air fryer, use the baking mode).
2. Wet the back of tortilla bowls in a bowl of water to prevent burning in the oven.
3. Divide spinach into four bowls, add green peas and corn to the remaining four tortillas.
4. Sprinkle salt and garlic powder in each egg boat.
5. Break one egg into each boat, shaping it as desired.
6. Add chunks of feta cheese on spinach boats and grated mozzarella on the corn and pea boats. Sprinkle marjoram and black pepper on all egg boats.
7. Leave in the oven for 18-25 minutes based on your desired egg doneness.
8. On a plate, place lettuce and drizzle balsamic glaze and sesame. Add avocado as shown in the video.
9. Serve the egg boats on top and enjoy!
