Kalbi Korean Short Ribs

This is our recipe for Kalbi Short Ribs.
Korean Short Ribs, or Flanken are cut lengthwise across the bone, unlike American style Short Ribs which include a thick slab of meat on top of the bone.

Kalbi, or Galbi is the name of a Korean dish using the Short Rib with a sweet and spicy marinade.

Recipe:
Ingredients:
2 lb- Korean sort ribs
1 ea- Asian pear, peeled, cored, quartered and chopped (The pear is used as the enzymes help tenderize the meat.
1/2 cup- soy sauce
1/3 cup- brown sugar
1/3 cup- rice vinegar
2 ea- garlic colves
1 ea- small white onion, peeled and quartered
1 TBSP- sesame oil
1 tsp- chili garlic sauce
1 tsp- ginger paste
Sesame Seeds

Method:
Blend all of the ingredients in a food processor until smooth.
Place the Short Ribs into a gallon storage bag and cover with the marinade.
Refrigerate for a minimum of 4 hours.
Remove the ribs from the bag and sprinkle sesame seeds.
Grill over medium heat until charred and caramelized.

Recipe for our sweet and spicy cucumber salad:
1 ea- English cucumber, sliced
1/4 cup- sliced scallions
1 tsp- red pepper flakes
1 tsp- fresh or dried mint
1/4 cup- apple cider vinegar
1 tbsp- sugar
pinch- salt
