💥 Pumpkin Cupcakes Ingredients: makes 18-24 cupcakes
2 cups Flour (240g)
1/2 cup Sugar (100g)
2 teaspoons Baking Powder (7g)
1 teaspoon Baking Soda (3g)
1/2 teaspoon Salt
2 teaspoons Pumpkin Spice (cinnamon, nutmeg, ground ginger, ground cloves)
1 teaspoon Ground Ginger
1 teaspoon Ground Cinnamon
15 oz Pumpkin Puree (1 can, 425g)
3/4 cup Brown Sugar (200g)
4 Large Eggs
2/3 cup Vegetable Oil (170ml)
1 tablespoon Vanilla Extract

Cream Cheese Frosting:
1/2 cup Unsalted Butter (113g), Softened
8oz Cream Cheese or Mascarpone Cheese, Room Temperature
1 teaspoon Vanilla Extract
1/8 teaspoon Salt
3 cups Powdered Sugar (360g)

Bake in preheated oven at 350F (177C) for 20 minutes
